Adventures in Baking

So as many of you know, I’m not the best cook. This year I’ve been really trying to amp up my cooking game. Its been going okay. Last night was the perfect example of how I’m not the luckiest person when it comes to the kitchen.
After spending a super fun day with some awesome blogging friends I decided I was going to make dinner AND dessert for me and Ryan. He’s the one usually cooking.
The dinner went smoothly – I made quesadillas. Super easy and good. 
A little back story: When we went pumpkin picking last weekend we stopped at a country farm and picked up some apples and other vegetables. So I decided I was going to make apple crisp this week.

Everything was going really well, measuring, mixing, length of time in the oven… And then I tried to take it out of the oven. Annnnd I dropped it. Right back into the oven. Only some of it fell out, thank goodness! But it just adds to my hesitation when it comes to cooking. Why am I so bad at it?! I know, I know… Practice makes perfect. But still.

Anyway, the recipe I used was REALLY good. Don’t judge it by the my photography skills… Ryan recommends you have it with vanilla ice cream.

Moving Weekend #1

This weekend we moved all of Ryan’s stuff into our new apartment. (My stuff is this weekend) The whole weekend was spent organizing, painting, and Ryan building IKEA furniture.

By the end of building all the furniture Ryan could hardly feel his hands…

While he was building I was painting. And painting and painting. Our goal is to paint each of the main rooms.
imageOh, and it was Cinco de Mayo so I used our new crock pot and made chicken burritos/tacos. Sooo good. And I didn’t burn anything and it all tasted good!

I get to run and go to Pure Barre this week which is very exciting. I can’t believe I ran Eugene a week ago! Woah.

Can You Freeze Soup?

Valentine’s Day with Ryan was so much fun. Super relaxed. Silver Linings Playbook was really good and I think everyone should see it such for the dance at the end. I laughed so hard! Then we enjoyed the chocolate dipped strawberries I had made the night before. I added peanut butter chips to some of them. I highly recommend doing it – super good.

Then it was the long weekend! Saturday I got my 16 miler in and it was the best long run! I ran 10 miles with a fellow NY Flyer and the other 6 by myself. I averaged an 8:40 pace. I have no idea where that came from, but I felt great the whole time. photo-1I’m feeling more and more confident about Eugene now that I got a solid long run in. 

Monday I added two new recipes to my recipe list. I’m getting closer and closer to my goal of cooking/baking 26 recipes this year.

The first recipe I made was White Bean Soup with Red Chard. There was A LOT of chopping involved – finely chopping two onions is not fun…

But – I did it! I made my first ever homemade soup!!!

I then moved on to baking. This bad boy doesn’t look so pretty but it tastes really good! I made pear upside down cake. The hardest part was flipping the darn thing over on the cutting board.

Now I have a ton of soup and lots of cake… and there’s one of me. So yeah… I’ll be eating soup and cake for the rest of the week. Can you freeze soup?

NYCRuns Half-Marathon this Sunday in Central Park! I can’t wait to kick butt on another training run!

Weekend

So the blizzard came to New York City and totally ruined my Saturday morning running plans. I was supposed to meet up with some NY Flyers for a 16 mile run but… as you can see running outside was not going to happen.

photoThe snow is pretty on the trees, but I really needed to get that run in… I headed to the gym to get some miles in but went at the complete wrong time. EVERYONE was there. I was only able to get 3.5 miles in because there was a line to use the treadmills and you get kicked off at 30 minutes… Totally lame…

photo-1 Moving on from that disaster of a long run I decided to do some organizing (Courtney’s idea!). I took everything out of my running drawers and figured out what I use and what I should toss. I also categorized my workout stuff for running and Pure Barre. Now it’ll be super easy to find stuff.

photo-3I continued to be productive and made peanut butter chocolate chip walnut cookies for the Girls Night Out I was going to later that night. They were really good.

photo-4 We had a  great time and the cookies were a hit! I also got an amazing nacho recipe from my friend Mary. Super easy and delicious. (and meatless!)

And on Sunday! I made spaghetti squash!!! I’m on a roll with this no meat thing. I got the recipe HERE. I used spicy tomato sauce and Boca meatless chicken burgers. I can’t wait to have the leftovers tonight!

A Win is a Win

This past weekend flew by. I feel like I had something planned every minute of Saturday and Sunday. I didn’t get to run, but I did get to go to a Pure Barre class on Saturday.

Sunday Ryan and I went to the Jets game. We had so much fun tailgating and hanging out. And the Jets won which is always great!

We were able to cross two more recipes off the 26 New Recipes on the To Do list. We made deviled eggs and the awesome burgers below. They’re chicken and black bean with egg on top. They were soooo good! And healthy too.

I loved our seats. I don’t think I’ll ever be able to go up in the higher seats again. The view was just too goo here!

Now it’s Monday and I’m pretty exhausted. I’m pretty certain I’ll be tired the whole month of December. It’s always the busiest month filled with parties and work events… Once January comes I’ll be happy to relax and start training for the Eugene Marathon!

Checking off the list. slowly but surely

Thanksgiving vacation in New Jersey was so nice and relaxing.  The one downside was the outside of my left hurt began to hurt when Ryan and I went for our Thanksgiving “turkey trot”. So weird! I haven’t run since… I’m going to try tonight. Fingers crossed.

Over the weekend I tried TWO new recipes. I’m now down to 24 on my “26th year to do list”. I forgot to take a picture of the cookie/brownie bars but they were a total hit! People even asked for the recipe! That has NEVER happened to me before. NEVER.

Then I tried a breakfast recipe I found on Pinterest. It’s super easy and has four ingredients. Perfect for me.


And then… when I got back to the City I made pumpkin bread. My parents had sent me the Traders Joe’s mix. I’m not counting this as one of the recipes since it’s from a box. BUT it is really good.

PS – I’ve never been this strong in my life. Pure Barre is amazing.

We’re those people…

A couple of weeks (Halloween weekend) ago Ryan, Bailey and I went to a pumpkin patch for a day Fall festivities.

We are those people who act as though our dog is our child…

We then carved our pumpkins (Mine took almost three hours!)

And then the next morning I baked pumpkin bread! Well, tried to… It took almost an hour more than the directions had said.

Running Skirts, Pasta and Stretching

Random things this week –

Does running skirts make anyone else feel awkward or unsure of themselves??? SkinnyRunner – Rocks them all the time and she looks super cute. For some reason they make me nervous.


I bought this Lululemon running skirt awhile ago and just wore it to the gym for the first time on Tuesday. It’s really cute and comfortable but I don’t know – I’m running in a skirt… Anyone else feel like this? Or is it just me?

I made this pasta last night and it was sooo good and sooo easy. There’s four ingredients. Loved it. And will probably make it again tonight. yum.

Whenever I stretch Lexi has to be right next to me. She licks my face and tries to snuggle as close as possible. This only happens when I’m stretching though… I don’t get it.

And it makes stretching very difficult.


I’m at 11 miles (plus an hour of cross-training on the elliptical) so far this week. I have a big run on Sunday – 16 miles of pacing for the NYRR!

I’m a cooking machine.

This week I felt as though I had great balance. I ran, hung out with Ryan and actually went grocery shopping and cooked. I made a conscious effort to spend time with Ryan this week since next week is the beginning of NYC Marathon training. AND he is moving home to New Jersey at the end of July so we won’t be seeing each other as much. July thru October will probably be difficult but I know we’ll be okay.

Anyways – Back to this week!
I did not volunteer on Monday and I didn’t go to the Flyers Speedwork. Instead I ran both nights on my own and made time to see Ryan. I think it was a win-win since I still got my running in.

Last night was when I really felt as though I got this whole “balance” thing down. After work the last thing I wanted to do was run… But I sucked it up and got down to business. I picked up some food for Lexi (cat), hit the gym (4 miles) and then went straight to the grocery store. During the day I had read up on saving money on meals by buying in bulk and freezing already made meals. I know this isn’t a new thing – but for me it was life changing!(<— over-exaggerating) I bought a five pound bag of potatoes, a big thing of chicken breasts, two sweet potatoes, two marinades, sour cream, and shredded cheese for only $26! In New York that’s amazing! 
Once I got home I got to work. I made twice baked potatoes and marinated chicken two ways – honey bbq and teriyaki. 
Total it took about 2 hours with clean up but now I have a bunch of meals. No more pasta for every meal!

I’m really proud of myself since I’m not the best cook and I know this is going to help when training really gets tough and I’m exhausted. I’m going to make it a goal to do this at least once a once from now on. It saves money, I’ll eat healthier and I’ll actually have a little variety in what I’m eating!

So. I ran on Friday… But I didn’t get my 6 miler in. Saturday was way too busy – I would have had to wake up at 5am to run. And Sunday – I slept a lot and watched The Help. I loved being lazy and have anything to do. 

However – The Red Rock half is in a month so I need to get back on track.

In between the two birthday parties Ryan and I went to on Saturday, we set aside time to have dinner just the two of us! Saturday night dinner: Homemade pizza! Peppers, onion, pepperoni and cheese. Perfection! Eating this and watching House Hunters, couldn’t get any better!

Can you believe February is here!? Man. Time flies!
